Tunta: White potatoes from Bolivia

Tuntas are dehydrated potatoes that, thanks to a special drying technique, achieve their characteristic white color and thus also attain a longer shelf life. They are occasionally referred to as Chuño Blanco.
They are the classic side dish for the famous Sajta de Pollo and a very special Bolivian specialty.
Before preparation, Tuntas must soak in water for several hours, allowing them to regain their original size. After that, they can be cooked normally.

The preparation of Tuntas

Step 1: Soak the Tuntas in water overnight

Step 2: Tear the soaked Tuntas into small pieces and boil in fresh water for 30-40 minutes.
