Bolivian Recipes: Cheese Roll

The preparation of the traditional Bolivian cheese roll is very simple. We show you a recipe with a slightly spicier variant (with Ají) and a slightly milder variant without the Bolivian chili spice. One thing both variants have in common: they are both delicious.

INGREDIENTS FOR CHEESE ROLL

  • For the dough:
  • 2 cups of wheat flour
  • 2 egg yolks (keep the egg whites)
  • 2 teaspoons of baking powder
  • 4 tablespoons of butter
  • 1 teaspoon of salt
  • Warm milk as needed
  • For the filling:
  • 1 medium-sized cream cheese, grated
  • 2 egg whites
  • 1 teaspoon Red Chili or red dye (optional)

PREPARATION OF CHEESE ROLL

  • 1. Sift 2 cups of flour into a large bowl to make it very fine and airy.
  • 2. Add the melted butter. Rinse the flour and butter together until it forms a slightly grainy mixture.
  • 3. First, add the 4 tablespoons of sugar, then the 2 tablespoons of baking powder.
  • 4. Now add 1 teaspoon of salt and finally mix all the ingredients evenly together.
  • 5. Add the 2 egg yolks
  • 6. Gradually add the warm milk and mix all the ingredients until a smooth dough is formed. You can add a little flour if the dough is a bit too sticky. The dough should be soft and easy to knead with your hands without much resistance.
  • 7. Cover the dough and let it rest for a few minutes.
  • 8. Place the 2 egg whites in a new bowl and beat them stiff with a hand mixer.
  • 9. Add a little milk to the Ají and form a homogeneous paste. Make sure that no lumps form.
  • 10. Divide the grated cheese into 2 parts and mix the stiffly beaten egg whites with the cheese.
  • 11. Add the Ají/milk paste to one part of the cheese
  • 12. Now also divide the dough into 2 parts
  • 13. Roll out the dough to the desired thickness. Use a floured surface for this, although the dough should not actually be sticky. 
  • Distribute the cheese mixed with Ají on the dough and finally roll it up into a roll.
  • 15. Shape the second cheese roll - this time with the unsharpened cheese mixture.
  • 16. To achieve a golden-brown color for the cheese rolls, crack an egg and brush the cheese rolls with it using a pastry brush.
  • 17. Finally, we sprinkle some grated cheese on the rolls – done!
  • 18. We place the cheese rolls in the oven: Bake at 180 degrees for about 25 minutes.
