Bolivian Recipes: Marraquetas
Marraquetas are traditional crispy rolls from Bolivia. We will show you how easy they are to prepare and what ingredients you need.
INGREDIENTS FOR MARRAQUETAS (8 PIECES)
- 500 g flour
- 1 teaspoon of salt
- 3 teaspoons of dry yeast
- 2 tablespoons of sugar
- 1 1/2 tablespoons warm water
PREPARATION OF MARRAQUETAS
- 1. Activate the yeast by mixing it with the warm water and the sugar.
- 2. In a bowl, mix the flour, salt, and activated yeast.
Cover the dough with a damp cloth to let it rest.
- 3. Let it rest for 45 minutes and then fold the dough from the outside in with dampened fingers.
- 4. Now let the dough rest for another hour and then fold/knead the dough again with wet fingers from the outside in.

5. Cover the dough, let it rest for the last time for 45 minutes, and then prepare the work surface.
Smooth the dough with a little flour, roll it out, and cut it into 8 equal portions.
- 6. Shape the Marraquetas. Make a cut in the dough with a knife or a razor blade.
- 7. Preheat the oven. Place the rolls in the baking pan, cover, and let rest. Bake for 20 minutes at 220 degrees.
- 8. Enjoy, best fresh from the oven and for example in combination with a cup of delicious coffee.
