Bolivian Recipes: Marraquetas

Marraquetas are traditional crispy rolls from Bolivia. We will show you how easy they are to prepare and what ingredients you need.

INGREDIENTS FOR MARRAQUETAS (8 PIECES)

  • 500 g flour
  • 1 teaspoon of salt
  • 3 teaspoons of dry yeast
  • 2 tablespoons of sugar
  • 1 1/2 tablespoons warm water

PREPARATION OF MARRAQUETAS

  • 1. Activate the yeast by mixing it with the warm water and the sugar.
  • 2. In a bowl, mix the flour, salt, and activated yeast. Cover the dough with a damp cloth to let it rest.
  • 3. Let it rest for 45 minutes and then fold the dough from the outside in with dampened fingers.
  • 4. Now let the dough rest for another hour and then fold/knead the dough again with wet fingers from the outside in.
  • 5. Cover the dough, let it rest for the last time for 45 minutes, and then prepare the work surface. Smooth the dough with a little flour, roll it out, and cut it into 8 equal portions.
  • 6. Shape the Marraquetas. Make a cut in the dough with a knife or a razor blade.
  • 7. Preheat the oven. Place the rolls in the baking pan, cover, and let rest. Bake for 20 minutes at 220 degrees.
  • 8. Enjoy, best fresh from the oven and for example in combination with a cup of delicious coffee.
