Bolivian Recipes: Sajta de Pollo

The Sajta de Pollo is a typical dish, especially in the city of La Paz. On every occasion and special event, Sajta is served in every family. Side dishes include potatoes, Tunta (dried potatoes - white), and tomato-onion salad.

INGREDIENTS FOR SAJTA DE POLLO (6-8 SERVINGS)

  • 1 chicken or 8 chicken pieces 
  • 8 large potatoes (waxy)
  • Ají Amarillo (ca. 150 gr)
  •  1 clove of garlic
  • 1/2 cup peas
  • 2 medium-sized onions
  • Salt, Pepper, Cumin (to taste)
  • 250 g Tunta
  • 75 g peanuts (roasted without salt)
  •  2 tbsp frying oil
  • 1 tomato (diced)
  •  1 onion
  •  Locoto or chili (diced)
  •  Quirquiña or coriander

PREPARATION OF SAJTA DE POLLO

  • 1. Mix aji amarillo with a little water until a cream forms.
  • 2. Cut and wash the chicken (8 portions).
  • 3. Finely chop the onion, place it in a pot, then add the garlic and peas with a little salt and sauté.
  • 4. Then add the Aji amarillo.
  • 5. Seal the chicken in a pan with a little oil and place it in the pot.
  • 6. Season to taste and cook until the chicken is tender.
  • 7. In another pot, cook the "Tunta" that has been cut into four pieces with a little salt.
  • 8. Puree the peanuts and cook them in a pot with a little salt.
  • 9. This is mixed with the Tunta.
  • 10. Finally, slice the onion and dice the tomatoes. Add Quirquiña as a decoration. In our shop, you will find Ají Amarillo available as whole pods and ground.
