Bolivian Recipes: Chuño Phuti with Eggs and Cheese

A simple recipe for scrambled eggs with cheese and Bolivian chuños (Bolivian black dried potatoes).

INGREDIENTS FOR CHUÑO PHUTI

  • 100 grams of cheese
  • Salz & Pfeffer

Chuño Negro (pcs. 500 g)

PREPARATION OF CHUÑO PHUTI

  • 1. Soak the chuños in water overnight 
  • 2. Boil in fresh water the next day
  • 3. Tear cooked chuños into pieces and sauté with 2 tablespoons of oil
  • 4. Drei Eier zerschlagen, umrühren & dazu geben.
  • 5. Stir well with a wooden spoon. Salt and pepper to taste
  • 6. Finally, add the grated cheese and let it cook for 2-3 minutes.
  • 7. Serve – and season to taste or garnish with herbs if needed.
