Bolivian Recipes: Pique macho Cochabambino

Pique macho is a typical hearty Bolivian dish from the city of Cochabamba – easy and quick to prepare. Smaller portions are simply called Pique; Pique Macho is usually a very large portion that is hardly manageable by one person alone. Pique macho is traditionally seasoned spicy.

INGREDIENTS FOR PIQUE MACHO

  • 1 kilogram of beef
  • 6 Vienna sausages 
  • 2 Chorizo
  • 4 eggs
  • 1 kilo of potatoes
  • 2 medium-sized onions
  • 3 medium-sized tomatoes
  • 2 Locotos (or jalapenos)

PREPARATION OF PIQUE MACHO

  • 1. Boil the chorizo in a pot of water to release the fat. 
  • 2. Boil the eggs in the same pot.
  • 3. Peel and slice the onions and potatoes (into half-moon shapes).
  • 4. Cut the beef into pieces and place it in a bowl, season with a little beer, salt, cumin, pepper, soy sauce, and the garlic clove, and marinate the meat for one hour.
  • 5. Cut the Vienna sausages and the chorizos into medium-sized pieces; roast in oil in a pan.
  • 6. In a pan, sauté the seasoned beef and add the Vienna sausages and pieces of chorizo.
  • 7. Fry potatoes in the pan or in the oven to make crispy French fries.
  • 8. Serve the fries on a plate and garnish with meat, raw onion, tomato, locoto (or jalapenos), and boiled egg.
