Papalisa (in other regions of South America also called Olluco, Ulluco or Melloco) is the most popular potato variety from Bolivia and the main ingredient of the famous "Ají de Papalisa".
There are many other preparation methods, and the Papalisa can not only be boiled but is also suitable for making mashed potatoes, for example.
Highlighting the great taste and high nutritional value, the distinctive appearance of the Papalisa is also noteworthy: they are orange-yellow with reddish spots.
Papalisa is also called Olluco
The Papalisa is not only very popular and widespread in Bolivia – it is also found in other South American countries of the Andean region such as Colombia, Peru, and Argentina. There, it is also known by the names Olluco, Ulluco, Ulluma, Melloco, or Papa Lisa.
The Papalisa plant grows at altitudes between 3000 and 4000 meters.
Papalisas have a caloric value of 220 kJ per 100 g. They contain 86% water, 12.5% starch, 0.1% fat, 1-2% protein, and 23 mg of vitamin C.
