To prepare, the Papa Seca are soaked in water for several hours (or preferably overnight), allowing the small potato crystals to regain their original size – and finally cooked.
The drying of the potatoes traditionally serves to extend their shelf life and allowed the Aymara to have potatoes available year-round.
Papa Seca is most commonly used to prepare "Carapulcra." Carapulcra is a hearty Peruvian meat and potato stew made with peanuts and chilis (Ají). Variants of this stew also exist in Chile and Bolivia.
