Tuntas are dehydrated potatoes that, thanks to a special drying technique, achieve their characteristic white color and thus also attain a longer shelf life. They are occasionally referred to as Chuño Blanco.
They are the classic side dish for the famous Sajta de Pollo and a very special Bolivian specialty.
Before preparation, Tuntas must soak in water for several hours, allowing them to regain their original size. After that, they can be cooked normally.
